Instructions:

Before and/or after your vacation to Colorado, try cooking some authentic western recipes. Using the recommended recipe below for Chuck wagon stew, cook up some grub, and transport yourself back in time to days when covered wagons and mining towns were most prevalent.
You'll need the following ingredients:
- 5 cups of beef cubes (or other another meat or meat substitute)
- 2 cups chopped potatoes
- 2 cups chopped carrots
- 2 sliced onions
- 2 tbs all-purpose flour
- 1 tbs paprika
- 3 tbs chili powder
- 1 tbs cinnamon
- 2 tsp salt
- 3 tbs lard
- 1 garlic clove finely chopped
- sprinkle of crushed red peppers
- 3 cups of chopped tomatoes
Heat the lard in a large stew pot. Use paprika, 1 tsp chili powder, and salt to coat the beef cubes and then brown the coated cubes in the stew pot with hot lard. Add onion and garlic to the pot and cook until soft. Add tomatoes, chili powder, cinnamon, and crushed red peppers. Cover and simmer for 2 hours. Finally, add potatoes and carrots and cook for 45 minutes, until vegetables are done.
For maximum authenticity, serve outside or on the back porch in camping bowls with only spoons for silverware. Serves 6.
